Who cooked the rice at your family's table, and did they measure it, or did they just know? Tell me in the comments.
The bag says one cup of rice, two cups of water. That is why your rice comes out wet, gluey, and scorched on the bottom. In this lesson, Mrs. Hadley shares six old Home Ec tricks for fluffy long-grain white rice on the stove, with separate grains every time. No rice cooker, nothing to buy.
THE CHALKBOARD RULE
1 cup rinsed rice, 1½ cups water. 20 minutes on low, 10 minutes off the heat. The lid stays on.
MRS. HADLEY'S SIX RICE TRICKS
1. Stop taking your water measure from the bag. One cup of rinsed rice, a cup and a half of water, and a quarter teaspoon of table salt.
2. Rinse it in a strainer for about a minute and a half, until the water is nearly clear.
3. Mind the lid. If it's loose, or has a steam hole, crimp foil over the pot and set the lid on top.
4. Cover it, turn it to low, set a timer for twenty minutes, and take your hands off. No stirring, no peeking.
5. Let it rest ten minutes off the heat with the lid on, then fluff it with a fork.
6. When you cook more rice, don't multiply the water. One cup of water for every cup of rice, plus half a cup for the pot.
IF IT HAS ALREADY GONE WRONG
Still wet or not quite tender: lid back on, 2 to 4 minutes more.
Crunchy and the pot is dry: add a little water, cover tightly, keep cooking.
Soft and mushy: spread it on a parchment-lined baking sheet, about 10 minutes at 350°F.

This lesson is for long-grain white rice on the stove. Brown rice, rice cookers, and pressure cookers have rules of their own.
They stopped teaching this in schools. I never stopped.
Next lesson: a pot of beans.
The methods in this video come from traditional Home Economics teaching and tested cooking sources.
