Pansit (also spelled pancit) is a traditional Filipino noodle dish. In Filipino culture, pansit is often served at birthdays and special occasions because the long noodles symbolize long life and good fortune. Heat oil in a pan, then sauté onions and garlic until fragrant. Add the protein: chinese sausage, fish balls, and rotisserie chicken. Season with salt and pepper, then sauté for a few minutes. Add the carrots, green beans, celery, and red bell peppers. Cook for 2–3 minutes. Cover with a lid and cook for about 10 minutes or until the noodles are tender.
