If you have one eggplant and one onion, you have dinner. This is baingan bharta, smoky mashed eggplant from North India, and there's no oven anywhere in the method. 🍆🧅
The smoky flavor comes from charring the eggplant right on your stove. In this video you'll see two ways to do it: straight over a gas flame, or in a dry cast iron pan with a lid for electric stoves. Plus the one step that stops an eggplant from bursting, how to peel it without losing the smoke, and how to cook the mash until it turns thick and glossy.
🍆 YOU NEED
• 1 large globe eggplant (1–1½ lb), heavy for its size with tight, shiny skin
• 1 large onion, finely chopped
• 3 garlic cloves (optional, tucked into the eggplant)
• 1–2 green chilies, finely chopped
• A thumb of ginger, grated (or a cube of frozen ginger garlic paste)
• 2 tablespoons oil (mustard oil, neutral oil or ghee)
• 1 teaspoon cumin seeds · ½ teaspoon turmeric · 1 teaspoon ground coriander · ½ teaspoon mild red chili powder
• Salt, chopped cilantro, a squeeze of lemon
• Optional: 1 medium tomato, chopped
🔥 CHAR IT (NO OVEN)
• Gas: foil under the grate, fan on, eggplant straight on a medium flame. Turn with tongs until black all over and fully collapsed, 10–15 min.
• Electric: dry cast iron pan, medium-high, lid on. Turn every 4–5 minutes, 25–30 min.
👩🍳 THE METHOD IN SHORT
1. Slit or poke the eggplant all over first so it can't burst. Rub with a little oil.
2. Char until black and collapsed. Rest it covered for 10 minutes.
3. Peel by hand. Don't rinse it. Mash roughly with a fork.
4. Cumin in hot oil, then onion until soft and light golden. Ginger, garlic, chili, then the spices (and tomato if using).
5. Add the mash and cook 8–10 minutes, stirring, until thick and glossy. Cilantro and lemon to finish.
⚠️ SAFETY
Always slit or poke a whole eggplant before charring or microwaving. Never leave it alone on an open flame, and keep towels and sleeves clear. Use cast iron, carbon steel or stainless steel for dry high heat, and check your pan's instructions.
🛟 IF IT GOES WRONG
Bitter: choose a heavier, shinier eggplant next time; add lemon now. Watery: keep cooking until the water goes. Not smoky: char darker and never rinse after peeling.
🧊 LEFTOVERS
Refrigerate within 2 hours, eat within 3–4 days. Reheat in a pan with a splash of water.
