In fine dining, service is not just about delivering plates — it’s about creating a seamless rhythm that allows guests to enjoy their meal without interruption. In this lesson, we dive into the two core segments of the dining flow: Serving Rules and Bussing Rules. Segment One: Serving Rules Service begins before the food even leaves the kitchen. Learn how to: Prepare the table by adjusting cutlery for the upcoming course. Follow proper etiquette: left hand from the left in the U.S., right hand from the right in Europe. Use the point system to deliver dishes to the correct guest without asking “Who ordered this?” Announce each dish by name, serve ladies first, gentlemen next, and the host last. Anticipate guest needs by proactively bringing pepper, sauces, or steak knives. Conduct the “2-minute, 2-bite” check to ensure satisfaction. Segment Two: Bussing Rules Clearing plates is just as important as serving them. In this segment you’ll learn: When to clear (within 3 minutes of guests finishing, never rushing anyone). How to recognize signals that guests are done. Correct etiquette: clear from the right with the right hand, move clockwise, and always ask politely. Efficient carrying techniques (two-plate, three-plate, overhand, underhand). Silent, graceful clearing without stacking plates in front of guests. Proper crumbing down and resetting for dessert service. Why This Matters Serving and clearing with precision and elegance creates flow in the dining room. Done correctly, it reassures guests that they’re cared for at the highest level. Guest Expectations Timely and accurate service. Anticipation of needs before they ask. Silent, respectful clearing that keeps the table neat and elegant. Practical Tip Practice carrying multiple plates until it’s second nature. Keep your service cloth clean and discreet, and rehearse crumbing so it looks effortless and refined.
