🧂 Ingredients 1 cup Rice, washed 2cup Daal Water 5–6 cups, depending on desired consistency 2–3 tbsp Mustard Oil 1 tsp Cumin Seeds (Jeera) 1–2 Bay Leaves (Tej Patta) 1 tbsp Grated Ginger 2–3 Green Chillies, chopped 5–6 Garlic Cloves, chopped 1–2 Onions, finely chopped 2 Tomatoes, finely chopped Salt, to taste 1–2 tsp Coriander-Cumin-Black Pepper Powder ½ tsp Turmeric Powder For Serving Chokha Papad chutney 🧂 Salt Tip Start with around 1½ tsp salt. After cooking, taste and add another ¼–½ tsp if required. Salt can vary depending on the dal, vegetables and personal preference. 🫙 Oil Tip For 4 people, *3 tbsp mustard oil* will give a nice desi flavour without making the khichdi excessively oily. If you prefer lighter khichdi, use **2 tbsp**. 💧 Water Tip Thick khichdi: around 5 cups Medium/soft khichdi: around 5½ cups More runny/comfort-style: around 6cups 👩‍🍳 Recipe First, heat mustard oil in a pressure cooker. Add cumin seeds and let them splutter. Add bay leaves and sauté for a few seconds. Add grated ginger, green chillies and chopped garlic. Sauté until fragrant. Add chopped onions, mix well and stir until they start turning golden. Add salt and mix again. Add the chopped tomatoes and cook everything together, stirring occasionally. Cook until the mixture becomes golden brown and well cooked. Add the washed rice and mix everything together. Add coriander-cumin-black pepper powder and mix well. Add turmeric powder and stir everything together. Cook this mixture for about 7–10 minutes, stirring occasionally. Now add the prepared mixture to the pressure cooker. Add water according to your desired consistency and mix well. Put the cooker on the flame and let it cook. Turn off the flame just before the first whistle. Allow the khichdi to finish cooking in the residual heat inside the cooker. Once the heat has completely settled, carefully open the cooker. Give the khichdi a gentle mix and serve hot with Desi Ghee.
