I bought a small microwave to keep in my truck camper (this setup also works for the van). It's powered by the Anker Solix C1000 portable power station which can push up to 2,000 watts via the AC inverter. As you can see in the video, this 700-watt microwave actually pulls around 1,100-1,200 watts. No issues running a computer monitor, microwave, rooftop Maxxair Fan, charging phones and cameras. The Anker power station is a beast. We recharge it via a 100w solar panel on the roof, and when it goes below 80%, I'll switch on my Etaker F1000 alternator charger which will feed it up to 500 watts.
