Pav Bhaji looks like a simple Mumbai street food — mashed vegetables, butter, spices and a soft pav.
But its story may have started with something much bigger than a hungry mill worker.
In the 1860s, the American Civil War disrupted the global cotton trade and turned Bombay into one of the world’s most important cotton markets. New textile mills appeared, thousands of workers arrived, and an entirely new city culture began to form.
But who actually created Pav Bhaji?
Was it the mill workers who needed a fast, filling meal?
Was it the Gujarati cotton traders who stayed awake through the night waiting for market news?
Or did the dish slowly emerge from a changing Bombay with no single inventor at all?
In this documentary, we explore the disputed origin of Pav Bhaji, the rise of Girangaon, the story of Portuguese pão becoming Bombay’s pav, the mysterious history of its tomato-based bhaji, Sardar Pav Bhaji, the rise of pav bhaji masala, and how a food associated with Bombay’s textile mills survived even after the mills disappeared.
