Spend a quiet, cozy rainy weekend with me in Itaipava, in the mountains of Rio de Janeiro, Brazil. Slow down with peaceful moments at home, sleepy dogs, gluten-free carrot cake, and a charming local café. 🌿☕🐾

In this vlog, I’m visiting my boyfriend, Gustavo. The sound of rain invites us to slow down while our dogs, Beethoven and Pipoca, enjoy their cozy naps.
Living with celiac disease has made me fall in love with baking gluten-free comfort food. This weekend, I prepare a homemade gluten-free carrot cake with chocolate glaze—Gustavo’s favorite. We take our time savoring warm cake, fresh coffee, and calm moments together.
On Sunday, the rain clears up and we head out to Itaipava’s municipal park. Surrounded by green fields and tall trees, Pipoca and Beethoven get to stretch their legs and play. Later, we discover Jardim Secreto Café—a peaceful riverside café filled with handcrafted ceramics, a friendly cat, and wonderful specialty coffee.
A relaxing silent vlog featuring gentle music and ASMR everyday sounds: gentle rain, kitchen sounds, peaceful dogs, and cozy café ambience.
Thank you so much for taking a moment to slow down with us. If you love quiet routines, peaceful travels, and mindful moments, subscribe to Soft Living Stories to join our journey. 🤍
🥕 GLUTEN-FREE CARROT CAKE WITH CHOCOLATE GLAZE
A cozy homemade cake to enjoy with a cup of coffee. 🤍
Ingredients:
• 250 g raw carrots, peeled and chopped
• 3 eggs
• 160 g sugar
• 100 ml vegetable oil
• 120 g rice flour
• 70 g cornstarch
• 30 g sweet tapioca starch (polvilho doce)
• 3 g xanthan gum
• 10 g baking powder
• A pinch of salt
Instructions:
1. Preheat the oven to 180°C / 350°F. Grease a 20–22 cm cake pan.
2. Blend the carrots, eggs, sugar and oil until smooth.
3. In a bowl, combine the rice flour, cornstarch, tapioca starch, xanthan gum and salt.
4. Pour the carrot mixture into the dry ingredients and stir just until combined.
5. Gently fold in the baking powder.
6. Pour into the prepared pan and bake for approximately 35–45 minutes, or until a toothpick inserted into the cake comes out clean.
🍫 Chocolate glaze:
• 2 tablespoons unsweetened Dutch-process cocoa powder
• 5 tablespoons sugar
• 1 tablespoon butter
• 5–6 tablespoons milk
Combine all the glaze ingredients in a small saucepan before turning on the heat. Cook over low heat, stirring constantly. Once it starts bubbling, cook for another 2–3 minutes, until glossy and slightly thickened. Pour the warm glaze over the cake.
For a firmer, crackly glaze, use 6 tablespoons of sugar and 4 tablespoons of milk instead.
🌾 If baking for someone with celiac disease, use ingredients labeled gluten-free and clean utensils and surfaces to avoid cross-contact.
