🧾 INGREDIENTS
For cleaning:
1 kg mutton liver (kaleji), beef liver also works
Fresh lemon juice
3 to 4 glasses of water
For marination:
1 cup fresh whisked yogurt
2 tbsp fresh ginger garlic paste
1/2 tsp red chili powder
1/2 tsp crushed red chili (dara mirch)
1/2 tsp turmeric powder
1/2 tsp black pepper powder
1 tsp coriander powder (coarsely ground)
1 tsp cumin powder
No salt at this stage
For cooking:
1/2 cup cooking oil
1/2 tsp fine fenugreek seeds (methi dana)
1/2 tsp nigella seeds (kalonji)
3 to 4 whole cloves
1/2 tsp whole cumin seeds
1 to 2 small pieces of cinnamon
2 small green cardamoms
1 large black cardamom
4 medium onions, blended into paste
4 medium tomatoes, blended into puree
1/2 cup water (rinsed from the marination bowl)
Chopped green chilies
1/2 tsp garam masala powder
Salt to taste, added at the end
👩🍳 METHOD (QUICK OVERVIEW)
1. Wash the liver well in plain water and cut it into small, even pieces.
2. Place the pieces in a large bowl, squeeze fresh lemon over them, add 3 to 4 glasses of water and rest for 10 to 15 minutes. This helps remove the smell and extra blood.
3. Squeeze out the liver and move it to a clean, dry bowl.
4. Marinate with yogurt, ginger garlic paste and the dry spices (no salt) for 15 to 20 minutes at room temperature.
5. Heat 1/2 cup oil, then briefly fry fenugreek, kalonji, cloves, cumin, cinnamon and both cardamoms for 30 to 40 seconds.
6. Add the onion paste and cook on medium heat until the water dries and the color turns light golden. Do not over-brown it, or the gravy turns dark.
7. Add the tomato puree, then add the marinated liver along with the marinade.
8. Add 1/2 cup water, cover and cook on medium to high flame for 10 to 15 minutes until the liver is tender and the water dries.
9. Add green chilies, garam masala and salt to taste. Increase the flame and roast for 2 minutes until the oil separates.
10. Serve hot with tawa roti, tandoori roti or naan.
💡 PRO TIPS FOR PERFECT KALEJI
Cut the liver into small pieces so the masala reaches the inside.
Marinate at room temperature rather than in the fridge.
Do not over-brown the onions, as this makes the gravy dark.
Add salt only at the end. Cooking liver with salt from the start can make it firm and chewy.
