Yellowstone has been a national park for over 150 years, and the whole reason the national park system exists at all is weirder than it should be. Also, carbohydrates are basically LEGO bricks, and understanding them that way makes everything else about nutrition click. This week we cover both. Christina takes the history chair and walks through the origin story of Yellowstone National Park. The 19th-century explorers who first brought back the stories (which nobody believed), the near-mythical tales of geysers and bubbling mud that sounded like tall tales, the campfire conversation that supposedly sparked the whole national park idea, and the surprising political coalition that got Ulysses S. Grant to sign the 1872 bill creating the first national park in world history. Yellowstone didn't just protect a place. It basically invented a category. Then Caleb breaks down carbohydrates using one simple analogy: carbs are LEGO bricks. Single bricks (glucose, fructose, galactose), snapped-together pairs (table sugar, milk sugar, malt sugar), and giant LEGO castles (starch, fiber). He walks through what actually happens from the moment a carb hits your mouth to where it ends up stored in your body, why chewing a cracker makes it taste sweet, why two-thirds of adults can't digest milk sugar, why marathon runners hit the wall, and the real difference between refined carbs (lighter fluid) and whole carbs (a big log). If you've been confused about carbs for years, this is the segment that finally clears it up. Two hosts. Two unrelated topics. One episode that somehow makes sense by the end.
