In a small eatery there is a pot that has never once been allowed to go cold. 百年の出汁 (Hyakunen no Dashi / "A Hundred-Year Broth") is a warm original orchestral pastorale with Japanese vocals. Her great-grandmother lit the stove, and every night since, someone has added water, bones and kombu never emptied, only continued. Through the war years and the morning of the great flood, somebody always came to put wood on the fire. The taste shifts a little with each generation: her grandmother's hand with the salt, her father's way with the flame. The same pot, and yet new every year; at the bottom of it, time itself has dissolved. And the pay for all of it is one sentence from the back of a departing customer whose name she'll never know: "that warmed me up." That's enough. Tonight the steam rises again, tomorrow's water is quietly added, and she stirs in her own single ladleful her turn now. The fire is turned low but never out, simmering gently until morning.
