The real design challenge began with the site. For Zaitoon Calicut, the property itself presented a unique challenge — the site was nearly 5–6 feet below the main road, with an existing structure that had very little presence. We had to rethink how people would arrive, experience and remember the restaurant. From the entrance and 30-foot canopy to the black stone facade, landscape, interiors and locally inspired planting, this is the story of how we developed the architecture and restaurant design concept for Zaitoon Calicut. 30 days.
