RECIPE:
Cuban-Style Ropa Vieja — "Old Clothes"
The name Ropa Vieja — meaning "old clothes" in Spanish — comes from the shredded appearance of the cooked beef, which resembles tattered rags. Another popular folk legend says a poor, hungry old man once shredded his own old clothes and prayed for God to turn them into food for his family — his rags miraculously transformed into a savory shredded meat stew.
INGREDIENTS:
2-3 lbs flank steak (or brisket if you can't find a nice piece of flank)
Water + salt for pressure cooking
Olive oil — enough to sauté
1 small onion, diced
2 Tbsp fresh minced garlic
1 packet Sazón Goya
1 can tomato sauce
1 or 2 Tbsp tomato paste
2-3 cups reserved broth from the meat
A good splash of red wine (cooking wine is fine, I use whatever good red I have available)
A small splash of white vinegar
Salt & pepper to taste
1 bay leaf
1 red bell pepper + 1 green bell pepper, sliced into strips
Manzanilla olives — handful
DIRECTIONS:
Cook & Shred the Meat:
Put flank steak in pressure cooker. Cover with just enough water to cover meat, add salt — salt enough to your desired taste, do not over-salt. Pressure cook 30 minutes. Remove meat, reserve the broth for later use. Let rest and cool slightly, then shred — it should be easy since the meat has been cooked and tenderized.
Build the Base:
In a large pot, add olive oil and sauté the diced onion until it begins to become a tad translucent. Add fresh minced garlic, then Sazón Goya, tomato sauce, and tomato paste.
Combine:
Add shredded meat, 2-3 cups of reserved broth, splash of red wine, small splash of vinegar, bay leaf, salt & pepper, peppers, and olives.
Simmer:
Cover and simmer about 30 minutes.
Enjoy over white rice and a side of sweet plantains :)Cuban-Style Ropa Vieja — "Old Clothes"
