A flavourful, aromatic mushroom biryani made with fresh mushrooms, mint, coriander, green chillies and freshly sautéed whole spices. Perfect to serve hot with raita and papad!
Ingredients
Vegetables and herbs
Washed and sliced mushrooms
2 medium-sized onions, diced
2 tomatoes, diced
5–6 green chillies, chopped
1 inch ginger, chopped
4 garlic cloves, chopped
½ bunch mint leaves
½ bunch coriander leaves
1 stem curry leaves
Rice
3 cups rice, washed and soaked for at least 30 minutes
6 cups boiling water
Dry masalas
1½ tsp red chilli powder
2 tsp coriander powder (dhania powder)
1 tsp turmeric powder
1 tsp garam masala
½ tsp pepper powder
1 tsp additional pepper powder (as per taste)
Whole spices
2 bay leaves
4–5 cloves
½ inch cinnamon stick
3 green cardamoms
1 tsp cumin seeds (jeera)
1 tsp fennel seeds (saunf)
For cooking
Oil (we are using sesame oil)
1 tbsp ghee
Salt to taste
Preparation
Heat oil in a deep vessel and add 1 spoon of ghee.
Once the oil is hot, add 2 bay leaves, followed by cloves, cinnamon, green cardamom, cumin seeds and fennel seeds.
Add the diced onions and sauté until they turn slightly pinkish.
Add the chopped ginger, garlic and green chillies. Sauté until the raw smell disappears.
Add the chopped coriander leaves, mint leaves and curry leaf stem. Sauté for 2–3 minutes.
Add the diced tomatoes and salt. Cook until the tomatoes turn soft and mushy.
Add all the dry masalas – red chilli powder, coriander powder, turmeric, pepper powder and garam masala.
Fry the masala well until the oil starts separating from the mixture.
Add the sliced mushrooms and sauté for approximately 5 minutes.
Add the 3 cups of previously washed and soaked rice. Mix gently so that the masala coats all the rice grains evenly.
Now add double the quantity of boiling water. For 3 cups of rice, add 6 cups of boiling water.
Check the salt and adjust if required. Cook until the rice is completely done and the water is absorbed. Keep covered on low heat towards the end to allow the rice to cook evenly.
