Lauki Stuffed Lachcha Paratha 🫓🌶️✨🔥 Ingredients: For the dough 2 cups of whole wheat flour (atta) ½ tsp salt 1 tbsp oil or ghee Water, as needed For the lauki filling: 1 ½ cups grated lauki (bottle gourd) ½ tsp cumin seeds 1–2 green chilies, finely chopped ½ tsp grated ginger ½ tsp red chili powder ½ tsp coriander powder ½ tsp garam masala ½ tsp amchur powder 2 tbsp chopped coriander leaves Salt, to taste 1–2 tsp oil For lachcha layers: Ghee or oil, as needed Dry wheat flour, for dusting 👩‍🍳 Method: Make the dough: Mix atta, salt, and oil. Add water gradually and knead into a soft, smooth dough. Cover and rest for 15–20 minutes. Prepare the lauki: Squeeze the grated lauki thoroughly to remove excess water. Heat oil, add cumin, then ginger and green chili. Add the lauki and cook for 3–4 minutes until the moisture evaporates. Add chili powder, coriander powder, garam masala, amchur, salt, and coriander. Mix well and let the filling cool completely. Stuff: Divide the dough and filling into equal portions. Roll one dough ball into a small circle, place filling in the center, seal the edges, and gently flatten. Make the lachcha: Roll the stuffed ball into a thin circle. Lightly spread ghee over it and sprinkle a little dry flour. Make accordion-like pleats or cut into thin strips, then roll the strips into a spiral. Rest for 5 minutes. Gently roll the spiral into a paratha without pressing too hard, so the layers remain visible. Cook: Heat a tawa on medium-high heat. Cook the paratha on both sides, applying a little ghee, until golden brown and crisp. Serve hot with curd, pickle, or chutney.🫓🌶️✨🔥
