My great-grandfather left Palermo in 1880 with a notebook of recipes and nothing else in his pocket. Almost none of this was in it. He never wrote it down, because in his village everybody already knew it. Nobody knows it anymore. So I am setting it down here. These are 25 things a Sicilian kitchen does with a box of dry pasta that an American kitchen does not. No fancy equipment. No expensive ingredients. Nothing you do not already have in the house tonight. Number 2 is the big one. It is the reason a Sicilian sauce holds onto the pasta instead of sliding off it, and it takes sixty seconds and costs nothing. Most people pour it straight down the sink every single night without ever looking at it. Number 8 is printed on the side of the box you already buy. Once you can read it, you will never buy blind again. Number 25 is the thing I got wrong for the first thirty years of my life. And number 1 is not a trick at all.
