In this video, I’m making Jamaican Jerk Chicken & Cabbage using real fire, pimento wood, and a homemade jerk marinade packed with Jamaican flavour! The chicken is seasoned and marinated overnight before being cooked over the fire. A combination of Jamaican jerk seasoning, fresh herbs and aromatics, Scotch bonnet pepper, pimento, and the smoky flavour developed during cooking. Why is pimento wood used for jerk chicken?
