Ingredients: • 2 LG Eggs room temp • 1/2 cup veg oil or melted butter • 1/2 cup plain yogurt • 1/4 cup orange juice • 1 Tbsp orange zest • 1 tsp vanilla extract • 2 cups + 2 TBSPS all purpose flour • 1/2 cup sugar • 2 tsp baking powder • 1/2 tsp salt FOR GLAZE: • 1 cup powdered sugar • 1 tbsp orange juice Directions: •Preheat 350 and line muffin tin with liners •In a large bowl beat the eggs, add oil, yogurt, orange juice, orange zest, and vanilla extract. Whisk until just combined. •add flour, sugar, baking powder and salt whisk until just combined • divide batter evenly and bake for 20 minutes For glaze: Mix ingredients together.
