In this video, we explore the iconic Bafra Pidesi—a legendary closed-style Turkish flatbread originating from the Bafra district in Samsun (Black Sea region of Turkey). Unlike standard open pides, traditional Bafra Pide is crafted from a thin, crispy dough stretched up to 1 meter long, stuffed with seasoned minced meat and onions, baked in a blistering wood-fired brick oven, and generously brushed with rich local butter straight off the fire. We visit Pideli Maslak, a renowned local eatery hidden inside the Atatürk Oto Sanayi (Industrial Zone) in Maslak, Istanbul. Known for serving authentic Black Sea flavors, this spot is famous for its artisanal wood-fired baking. While their signature 1-meter Bafra Pide is by far the most popular item on the menu, they also craft a wide variety of traditional pides, including potato, cheese, and spinach fillings.
