At noon in late August, south of Houston, every cow in the field has packed into the shade of one live oak — every cow except one. She stands alone in the full sun, pale grey, with a hump on her shoulders and loose skin swinging beneath her throat, grazing as if the sun weren't there. She's a Brahman, descended from the sacred zebu of India. By most counts, fewer than three hundred of these animals were ever shipped to the United States. Yet their blood now runs through millions of Southern cattle. What sent Texas ranchers halfway around the world wasn't the heat. It was something smaller, invisible, and it killed cattle by the hundreds of thousands.
