We start with a calm morning routine—changing flower water, watering plants, and lightly dusting the living room. Then, my first Nordic Nest order arrives, featuring beautiful salt cellars and kitchen pieces. I also share a small haul from IKEA, Action, and TK Maxx as we organize two kitchen drawers, do dishes, and place new decor. Finally, my husband and I bake and enjoy a delicious homemade Red Riding Hood cake.

🍰 Red Riding Hood Cake Recipe (I used half the ingredients for 18cm diameter Cake Pan)
Ingredients for the cake base:
• 175 g softened butter
• 150 g sugar
• 1 packet vanilla sugar (or 1 tsp vanilla extract)
• 3 eggs
• 200 g all-purpose flour
• 1 packet baking powder (approx. 2–3 tsp)
• 1 jar sour cherries (reserve the juice!)
Ingredients for the cream filling:
• 30 g sugar
• 2 packets vanilla sugar
• 3 packets heavy cream stabilizer
• 250 g Quark (or Greek yogurt/sour cream)
• 250 ml heavy cream
Ingredients for the glaze:
• 1 packet red cake glaze
• 2 tbsp sugar
• 250 ml reserved cherry juice
Instructions:
1. Preheat your oven to 160°C / 320°F convection.
2. Cream together the butter, sugar, and vanilla sugar. Add the eggs one at a time, mixing well. Add the flour and baking powder, mixing until smooth. Spread the batter into a greased 26 cm (10-inch) springform pan.
3. Drain the sour cherries well, saving the juice! Distribute the cherries evenly over the batter. Bake for about 40 minutes. Let the base cool.
4. For the cream: Mix the sugar, vanilla sugar, and 2 packets of cream stabilizer into the Quark until smooth. Whip the heavy cream with the 3rd packet of cream stabilizer until stiff peaks form, then gently fold into the Quark mixture. Spread evenly over the cooled cake base.
5. For the glaze: Mix 250 ml of the reserved cherry juice with 2 tbsp sugar and the red cake glaze powder. Prepare according to the package instructions (bring to a brief boil) and gently pour the warm glaze over the cream layer.
6. Allow to cool completely and enjoy!
