Today in the tiny kitchen, I'm making a mini version of a smoky lemongrass chicken and herb rice! 🐔✨ The chicken is marinated in garlic, shallot, lemongrass, lime juice, and a touch of fish sauce and soy sauce, then grilled over charcoal until beautifully charred on the outside. 🔥 It sits on a bed of fluffy basmati rice cooked in chicken broth and folded with fresh parsley, thyme, and a sprinkle of togarashi for a gentle kick. 🌿🌶️ To finish, everything gets a spoonful of tangy chili-lime fish sauce and a little lime wedge on the side. 🍋 Sweet, salty, smoky, and fresh, all on one tiny plate!
