Fresh Coriander – ½ cup, chopped
تازہ دھنیا (باریک کٹا ہوا)
Lemon – 1, juiced لیموں
Homemade Kuta Tikka Masala – 2 tablespoons
گھر کا بنا کُٹا ہوا تکہ مصالحہ
Oil – ½ cup تیل
Butter or Ghee – 2 tablespoons (optional)
مکھن یا گھی
Tawa (griddle) – 1 (optional) توا
Marination:
Marinate the beef with the following spices for 1 hour:
Roasted Coriander Powder – 1 tablespoon
Roasted Cumin Powder – 1 teaspoon
Red Chili Flakes – 2 teaspoons (or to taste)
Turmeric Powder (Haldi) – 1 teaspoon
Salt – 2 teaspoons (or to taste)
Kachri powder (Meat Tenderizer) – 1 teaspoon
Method:
1. In a large pan, heat ½ cup oil and fry the chopped garlic until it turns light golden. Be careful not to over-brown it.
2. Add the marinated beef and stir-fry on high flame for 3-4 minutes until it changes color.
3. Pour in ¾ cup yogurt and mix well. Check if additional water is needed – beef and yogurt release their own moisture, so only add water if necessary.
4. Cover the pan and let the beef cook on low flame until it becomes tender (approximately 1.5 to 2 hours)
5. Once the beef is tender, increase the heat to high and let the excess water evaporate.
6. When a little moisture remains, turn off the heat.
7. Final Cooking: Take a large tawa.
Heat some oil and transfer the meat onto it.
Add ginger, green chilies, tikka masala, lemon juice, and fresh coriander. Cook on high flame, stirring continuously. If the masala starts sticking to the pan, sprinkle a little water (do not add too much).
9. Stir in 2 tablespoons of butter or ghee and cook on high flame for 2 more minutes.
10. Serve: Turn off the heat and enjoy your delicious Tawa Boti!
