Prawns Biryani Recipe
Prawns Biryani
Ingredients
*For the prawns*
500 g cleaned prawns
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp salt
1 tbsp lemon juice
*For the rice*
2 cups basmati rice
4 cups water
1 bay leaf
4 green cardamoms
4 cloves
1-inch cinnamon stick
1 tsp salt
*For the biryani*
3 tbsp oil or ghee
2 large onions, thinly sliced
2 tomatoes, chopped
1 tbsp ginger-garlic paste
2–3 green chillies, slit
½ cup yogurt
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp garam masala
½ cup chopped coriander
¼ cup chopped mint
½ tsp cumin seeds
1 tsp biryani masala
2 tbsp fried onions, optional
Saffron soaked in 2 tbsp warm milk, optional
Method
1. *Marinate the prawns:* Mix prawns with turmeric, chilli powder, salt, and lemon juice. Set aside for 15–20 minutes.
2. *Cook the rice:* Wash and soak basmati rice for 20 minutes. Boil water with the whole spices and salt. Add the rice and cook until it is about **70% done**. Drain and set aside.
3. *Cook the prawns:* Heat 1 tbsp oil in a pan and cook the marinated prawns for about 2–3 minutes per side, just until they turn pink. Remove them from the pan. Avoid overcooking.
4. *Make the masala:* Heat the remaining oil. Add cumin seeds and sliced onions. Fry until golden. Add ginger-garlic paste and green chillies; sauté for a minute.
5. Add tomatoes and cook until soft. Mix in turmeric, chilli powder, coriander powder, garam masala, biryani masala, and yogurt. Cook until the oil begins to separate.
6. Stir in the cooked prawns, half the coriander, and half the mint. Cook for just 1–2 minutes.
7. *Layer:* Spread the prawn masala evenly in the pot. Add the partially cooked rice on top. Sprinkle with remaining mint, coriander, fried onions, and saffron milk.
8. *Dum cook:* Cover tightly and cook on the lowest heat for **12–15 minutes**. Turn off the heat and let it rest, covered, for another 10 minutes.
9. Gently fluff the biryani from the sides and serve hot with **raita, onion salad, or lemon wedges**.
*Tip:* Prawns cook quickly, so cooking them only briefly before the final dum helps keep them juicy and tender.
