Gajar Ka Halwa
Ingredients
Red Carrots – 2 kg
Milk – 1.5 kg
Sugar – 1.5 cups
Cardamom Powder – ½ tsp
Desi Ghee – ½ cup (for the halwa)
Desi Ghee – 2 tbsp (for roasting the nuts)
Mixed Dry Fruits and Nuts – As desired
Khoya – 250 g (for mixing into the halwa)
Homemade Khoya – 250 g (for the topping)
Silver Leaf (Chandi Ka Warq) – As required, for decoration
Chopped Nuts – As required, for decoration
Directions
1. Select 2 kg of good-quality red carrots. Wash them thoroughly, peel them, and grate them.
2. Add the grated carrots to a large pot and cook over medium-high heat for about 5 minutes, until some of the moisture evaporates.
3. Add 1.5 kg of milk and bring it to a boil. Reduce the heat to medium-low and cook, stirring occasionally, until the milk begins to reduce.
4. Add 1.5 cups of sugar and ½ tsp of cardamom powder. Mix well and continue cooking, stirring occasionally.
5. Once the milk has almost dried up, add ½ cup of desi ghee. Mix well and continue cooking until the ghee begins to separate from the halwa.
6. In a separate frying pan, heat 2 tbsp of desi ghee. Add the desired dry fruits and nuts and roast them lightly.
7. Add the roasted nuts to the halwa and mix well.
8. Add 250 g of khoya to the halwa and mix until well combined.
9. Turn off the heat and transfer the halwa to a serving dish.
10. Spread 250 g of homemade khoya over the top to create a layer.
11. Decorate with silver leaf (chandi ka warq) and chopped nuts.
12. Serve warm and enjoy!
