📖 My cookbook, Nadine's Table for One: https://nadinecooksforone.com
(114 small meals for one, every amount for one and for two, in large print)
It is five o'clock, there is one chicken thigh in the pan, and the whole business feels like too much trouble for one plate. You used to feed six people without blinking. So here are 20 tricks out of farm kitchens and church basements, from before anybody sold us a nonstick pan. Most cost nothing and take under a minute. Number one turns a pot of plain rice into something you will want on a Sunday.
In this video:
0:00 Intro
1:18 20. Mayonnaise in scrambled eggs
2:03 19. Sugar instead of flour in the cake pan
2:46 📖 A word about my cookbook
3:19 18. Bacon grease in a coffee can
3:53 17. Vinegar soak for tough meat
4:34 16. The cup of pasta water
5:06 15. An ice cube in the burger
5:44 14. Pickle juice in the potato salad
6:19 13. Baking powder on chicken skin
7:00 12. Foil over the casserole
7:33 11. Yellow mustard in the macaroni and cheese
8:12 10. Ice water for sharp onions
8:51 9. Mayonnaise on the fish
9:33 8. Zucchini in the chocolate cake
10:16 7. Sheet cake started on the stove
11:03 6. Vodka in the pie crust
11:45 5. An egg yolk in the mashed potatoes
12:33 4. Buttermilk you make yourself
13:17 3. Potato pancakes from Monday's leftovers
14:00 2. A pinch of salt in the coffee
14:40 1. Rice cooked in coconut milk
15:43 Before you go
The catches, so you do not repeat my mistakes:
Vinegar soak for tough meat: several hours, not all afternoon
Mustard in the macaroni and cheese: one teaspoon, never two
Mayonnaise on the fish: spread it thin or it slides off
Zucchini in the cake: squeeze the gratings dry first
Salt in the coffee: a few grains, go light
If you like cooking this way, that is what my cookbook is. Nadine's Table for One: 114 small meals with every amount written for one and for two, in large print, with four weeks of suppers and the shopping lists to go with them. One payment, no subscription, a PDF and an EPUB you download right away. https://nadinecooksforone.com
