100年の木桶が育てる、発酵の風景。 和歌山県有田。山あいの小さな集落に、100年以上続く醤油蔵「カネイワ醤油」がある。 創業は1912年頃。もともとは地域の農家のひとつだった岩本家が、持ち回りで醤油を仕込んだときに 「おいしい」と評判になったことが、蔵の始まりだった。 その後、初代・岩本正吉が醤油づくりを学び、山から流れる“空海水”を求めてこの場所に蔵を建てたという。 蔵の中には、100年近く使われ続けている木桶が並ぶ。その内側には無数の微生物が住みつき、季節や湿度、気温に合わせて発酵を繰り返している。 「木桶じゃなければ、うちの味にはならない」 そう話すのは、五代目の岩本庄平さん。 冬の蔵は静かに眠るようで、暖かくなるともろみは再び動き始める。夏には発酵の香りが蔵いっぱいに広がり、100年使われた木桶は今もなお成長を続けている。 一度は酒造メーカーで蔵人として働き、効率的に微生物と向き合う酒造りを経験した庄平さんが、より効率やスピードが求められる時代の中で、カネイワ醤油では2年という時間をかけて醤油を仕込む。 「時代と真逆の方向に、これからも走っていく。」 そう語る五代目は、醤油だけでなく、この地域の火を守り続けたいとも話していた。 地元の人たちに支えられながら、100年以上続いてきた蔵。今日もこの場所で、ゆっくりと発酵が続いている。 ーーーーーーーーーーーーーーーーーーーーーーーーーーーーーーーー Location SessionKaneiwa Soy SauceArida, Wakayama A landscape of fermentation, shaped by 100-year-old wooden barrels. Arida, Wakayama.In a small mountain village stands “Kaneiwa Soy Sauce,” a soy sauce brewery that has continued for more than a century. Founded around 1912, the Iwamoto family originally lived as local farmers.The brewery began after the soy sauce they made during a community brewing rotation was said to be especially delicious. Later, the founder Masakichi Iwamoto studied soy sauce brewing and built the brewery here in search of the spring water known as “Kukai-sui,” flowing from the mountains nearby. Inside the brewery stand wooden barrels that have been used for nearly 100 years.Within them live countless microorganisms, continuing fermentation through changing seasons, humidity, and temperature. “If it’s not made in these wooden barrels, it won’t become our soy sauce.” That is what fifth-generation brewer Shohei Iwamoto says. In winter, the brewery feels as if it is quietly asleep.As the weather warms, the moromi begins to move again.During summer, the aroma of fermentation fills the entire space, and the century-old barrels still seem to continue growing even now. Before returning home, Shohei worked at a sake brewery, where he learned the craft of brewing alongside microorganisms. In an age driven by efficiency and speed, Kaneiwa Soy Sauce still takes nearly two years to complete its brewing process. “We will continue moving in the opposite direction of the times.” The fifth-generation brewer says he wants to protect not only the soy sauce, but also the fire of this community itself. Supported by the people who have continued living here, the brewery has carried on for over 100 years.
