Avarakkai poriyal (Broad Beans Stir-Fry)#fyp
A simple South Indian side dish with coconut. Serves 3.
Ingredients
250 g avarakkai (broad beans)
1 onion, chopped (optional)
1/2 tbsp grated coconut
2 tsp Coconut Oil
½ tsp mustard seeds
1 tsp Chana dal
2 dried red chillies, broken
1 curry leaves
¼ tsp turmeric powder
Sambar Powder 1 tbs
A pinch of asafoetida (optional)
Salt to taste
Method
1. Wash the avarakkai. Trim both ends, pull away any tough strings along the sides, and chop finely.
2. Heat oil in a pan. Add mustard seeds and let them splutter. Add chana dal and fry until golden.
3. Add dried red chillies, curry leaves, and asafoetida. Add the onion, if using, and sauté until soft.
4. Add avarakkai, turmeric, sambar powder and salt. Stir well and sprinkle in 3–4 tablespoons of water.
5. Cover and cook on low to medium heat for 10–15 minutes, stirring occasionally, until tender. Add a little more water only if needed.
6. Remove the lid and cook until any remaining water evaporates.
7. Add grated coconut, mix for a minute, and turn off the heat.
Serve with rice and sambar, rasam, or curd rice.
Tip: Use tender avarakkai for the best texture, and avoid adding too much water.
