Today I’m sharing a delicious and comforting African Fish Stew with Spinach and Eggplant, served with soft and hearty Ugali. This easy homemade meal is full of flavor, vegetables, and tender fish, making it perfect for a family dinner. In this recipe, I used: • 500 g fish (Mukeke) • 500 g spinach • 3 tomatoes • ½ eggplant • 1 medium red onion • 2 tsp olive oil • 2 fish bouillon cubes • 1 tsp turmeric • ½ tsp thyme • 2 tsp tomato paste • 3 garlic cloves • 500 ml water • Ugali for serving I started by frying the chopped red onion in olive oil until softened and lightly golden. I then added the diced eggplant and tomato paste, followed by garlic and chopped tomatoes. Next, I added the fish bouillon cubes, turmeric, and fish. I poured in the water, covered the pot, and let everything simmer. I then added the spinach, thyme. After cooking for about 5 more minutes, the fish stew was ready to serve. I served it with Ugali, making it a delicious and satisfying African-inspired family meal.
