None of the wooden walls in this film have any rot in them. The mould, fungus and lichen mentioned in the film are not relying on the wood for their sustenance and are not damaging the walls at all. The traditional design of the buildings keeps the walls just dry enough not to suffer from wet rot (or dry rot).
