Can three diamond stones and three strops take a semi-sharp knife to the next level? Let's find out — with hard numbers.
Tonight I'm walking through a full sharpening progression, start to finish. I take a knife that registered 255 grams on the Bess tester — sharp enough to cut, but not impressive — and work it through three diamond sharpening stones followed by three stropping stages.
The result? A final Bess score of 141 grams. That's a 45% reduction in cutting force — and I show you every step in between.
