Missing sandwiches and burgers on carnivore or keto? These protein buns might be your new go-to! Watch how I make 12 buns using whipped egg whites, protein powder, and beef gelatin—with no flour.
Use them for burgers, your favorite sandwiches, or even grilled ham and cheese! For grilled sandwiches, heat the fillings first. These buns brown quickly, so grill for about 1 minute per side and watch closely.

Recipe:
Protein Buns
Makes 12 buns
Ingredients:
• 1 cup egg whites
• ¼ teaspoon cream of tartar
• ¼ teaspoon salt
• 2 tablespoons allulose
• ½ cup egg white protein powder or any unflavored protein powder
• 3 tablespoons beef gelatin
Instructions:
1. Add the egg whites, cream of tartar, salt, and allulose to a stand mixer fitted with the whisk attachment. Whip until stiff peaks form.
2. Add the protein powder and beef gelatin. Gently mix or fold until incorporated.
3. Divide the mixture evenly among 12 bun molds.
4. Smooth and flatten the tops with a rubber spatula.
5. Place silicone baking sheets over the molds and press down lightly.
6. Bake at 325°F for 15 minutes.
7. Turn off the oven and leave the buns inside for at least 15 minutes, or up to 1 hour.
8. Remove from the oven, set the molds on the stovetop, and let cool for a couple of hours.
9. Remove the buns from the molds and store in the refrigerator.
10. When ready to use, slice a bun in half.
These buns work great for sandwiches, burgers, and anything else you’d use buns for—including grilled ham and cheese or other grilled sandwiches!
For grilled sandwiches, heat your fillings first. These buns brown quickly and can only grill for about 1 minute per side before they start to burn, so watch them closely.
