Dalcha is a traditional lentil-based stew from the Hyderabadi cuisine of Telangana, India, typically prepared with split chickpeas or pigeon peas, tamarind for tanginess, and a blend of spices including cumin, mustard seeds, garlic, and red chilies, often incorporating vegetables such as eggplant and unripe mango or meat like mutton or lamb. Here I incorporate with Sardines instead. The dish traces its origins to the Mughal era in the 16th century, representing a fusion of Persian and Central Asian culinary influences with local Indian ingredients, where lentils and meat were slow-cooked to create hearty accompaniments for rice-based meals.
