How to Make Jamunde (Jaam) | Forgotten Tulu Recipe from Mangalore

Jaam or Jamunde a forgotten Tulunad recipe that deserves to find its way back into our kitchens. ❤️
Crispy outside, soft inside and filled with the comforting flavours of jaggery and coconut, this traditional *Tulu/Mangalorean snack* is simple, delicious and full of nostalgia. A little taste of Tulunad that I hope we never lose. 🤎
Ingredients
To make Jamunde, you will need:
1 cup wheat flour
2 tbsp maida
1 cup water
250 g jaggery (bella)
½ cup chopped coconut
1 tsp cardamom (elichi) powder
Salt to taste
½ tsp baking powder
3 tbsp coconut oil
Making the Jaggery Mixture
Take a heavy-bottomed pan and place it on low heat.
Add 1 cup of water to the pan.
Now add the jaggery.
Let the jaggery melt slowly on low heat.
Once the jaggery has completely melted and starts to boil, you will notice that the colour becomes slightly darker.
Now add the chopped coconut to the boiling jaggery mixture.
Stir well and let it continue to boil on low heat.
Add the cardamom powder and mix well.
Switch off the heat and set the mixture aside to cool.
Making the Dough
Take a mixing bowl and add the wheat flour.
Add the maida.
Then add salt and baking powder.
Now add the cooled jaggery and coconut mixture to the flour.
Mix everything well until the jaggery mixture is completely incorporated into the flour.
Add a little water if needed.
Now use your hands to mix and knead the dough thoroughly.
Flap the dough like this for about 1–2 minutes.
The consistency should look like this.
The dough should be sticky with a slightly elastic texture.
Now add 2 tbsp of coconut oil.
Mix it in, cover the dough and let it rest for 4–5 hours.
Frying the Jamunde
Once the dough has rested, give it one gentle mix.
The dough is now ready to be fried.
Take a thick-bottomed kadai and heat the oil.
Make sure the oil is hot before you start frying.
Using your hands, take small portions of the dough and gently drop them into the hot oil.
Let the Jamunde fry until they turn golden brown.
Make sure they are evenly fried on all sides.
Once they are golden brown, remove the Jamunde from the oil.
And that's it!
Your delicious Jamunde is ready to eat.
Break one open and enjoy it hot with a cup of tea, or simply have it as a delicious mid-day snack.
