Gaido's Seafood Restaurant, Galveston (2026) I'll fight anyone who says the giant blue crab on this roof wasn't caught in Galveston Bay. Here's the thing: Gaido's has been a Galveston icon since 1911, when an Italian immigrant named San Jacinto Gaido (yes, like the battle) opened it as a sandwich shop. Born in Italy, destined to be a Texan. Today the fourth generation keeps one rule alive: only serve what's fresh. That's why I planned an entire day trip around winter oysters, and I'm not sorry. We go raw, then char-grilled with compound butter (the gateway oyster, they say), then a baked platter piled with cream, cheese, and breadcrumbs. Then comes the best-selling red snapper, topped with beurre blanc and lump crab. Turns out no offense to the East Coast, but you can't touch a Galveston oyster. Some meals are worth getting dressed up for.
