restaurant-style Rasedaar Aloo Gobhi at home! This quick and flavorful curry features tender potatoes and cauliflower florets simmered in a spiced tomato-onion gravy, finished with aromatic kasuri methi and fresh coriander. It pairs perfectly with warm rotis, parathas, or steamed rice for a comforting weekday lunch or dinner. Ingredients Cauliflower (Gobhi): 1 medium head, cut into bite-sized florets Potatoes (Aloo): 2 medium, peeled and cubed Mustard oil / Ghee: 2 tablespoons Cumin seeds (Jeera): 1 tsp Bay leaf (Tej Patta): 1 Onion: 1 large, finely chopped Ginger-garlic paste: 1 tablespoon Green chilies: 2, slit lengthwise Tomatoes: 2 medium, puréed or finely chopped Turmeric powder (Haldi): 1/2 tsp Kashmiri red chili powder: 1 tsp Coriander powder (Dhaniya powder): 1 tbsp Garam masala: 1/2 tsp Kasuri methi: 1 tsp, crushed Water: 1.5 to 2 cups (adjust for desired gravy consistency) Salt: To taste Fresh coriander: Chopped, for garnish Step-by-Step Instructions Prep & Sauté: Heat 1 tablespoon of oil in a pan. Lightly fry the cauliflower florets and potato cubes for 4–5 minutes until golden-edged. Remove and set aside. Make the Masala Base: Add the remaining oil to the same pan. Crackle cumin seeds and the bay leaf. Add chopped onions and sauté until translucent and light brown. Add Aromatics: Stir in the ginger-garlic paste and green chilies; sauté for 1 minute until fragrant. Spice It Up: Add the tomato purée along with turmeric, red chili powder, coriander powder, and salt. Cook on medium flame until the oil starts separating from the masala. Simmer the Curry: Add the lightly fried aloo and gobhi to the pan, coating them well with the spice paste. Pour in water, cover with a lid, and cook on low-medium flame for 10–12 minutes until the vegetables are tender. Finish & Garnish: Sprinkle crushed kasuri methi and garam masala. Turn off the flame, garnish generously with fresh coriander, and let it rest for 5 minutes before serving.
