The earliest known version of its name appears in the 12th century, when a man named Walter de Pinchcum was mentioned in correspondence involving Gilbert Foliot, then Abbot of St Peter's in Gloucester. Local tradition suggests a stronghold may once have stood in the area during the troubled reign of King Stephen in the 12th century, although no castle survives today and the story remains part history, part local legend. Pitchcombe later became closely connected with Gloucestershire's famous woollen-cloth industry. The streams and springs of the valleys around Stroud provided the water needed to power mills, while Cotswold sheep supplied the wool. At the industry's height, mills filled the valleys around Stroud and helped make the area internationally known for its cloth. Pitchcombe itself once had several mills. The surviving Little Mill, dating from the 18th century, was used for preparing and finishing woollen cloth. Its old mill pond was supplied by the numerous natural springs in the area. Another reminder of that prosperous period is Pitchcombe House, an impressive limestone country house built around 1740 for Thomas Palling. It survives today as a Grade II* listed building. The village church also has an unusual story. An earlier church, known locally as the Pitchcombe Cradle, dated from 1376. The present Church of St John the Baptist was built in 1819, reportedly constructed around the old church before the earlier building was dismantled from within. Pitchcombe's population has always remained relatively small. The first national census in 1801 recorded 216 people living in just 40 houses.
