A day full of simple joys. 🌾✨ _________ Healthy Pear Cake 🍐✨ Ingredients: • 2 ripe pears, peeled and chopped • 1 1/2 cups almond flour (or whole wheat flour for a non–gluten-free version) • 1/2 cup date paste (as a natural sweetener) • 1/4 cup coconut oil or olive oil • 2 eggs or 2 tbsp chia or flaxseed + 6 tbsp water (egg replacement) • 1/2 cup almond milk or oat milk • 1 tsp cinnamon • 1/2 tsp ginger powder (optional) • 1/2 tsp baking powder • 1/4 tsp nutmeg (optional) • 1/4 tsp salt • 1 tsp vanilla extract (optional) • 1/4 cup chopped walnuts or almonds (optional for topping) ⸻ Instructions: 1. Preheat the oven: Set your oven to 180°C (350°F). Grease your cake pan or line it with parchment paper. 2.
