He Started With a Rug on the Floor. 40 Years Later, the Whole Bazaar Eats Here

Haj Mahmood has been cooking for 57 years — since he finished the sixth grade in 1969. 40 years ago he walked into Tehran's Grand Bazaar with nothing but a rug on the floor, hauling water up and down the stairs by hand. Today, everyone in the bazaar eats at his restaurant. In this Iranian street food documentary we spend a full day inside Haj Mahmood Restaurant (رستوران حاج محمود), one of the oldest kitchens in Tehran's historic Grand Bazaar. The day starts at 6 AM: lamb and chickpeas go into the great pots for ghormeh sabzi and gheymeh, saffron goes into everything, and the famous tahchin — the golden saffron rice cake — is built layer by layer. The bazaar is so old it has no gas pipes, so the kitchen heats its gas tanks with hot water every morning, and the rice gets its secret finishing touch you will not find anywhere else. By 12 PM the bazaar workers flood in for koobideh and barg kebab, buttery filet mignon, bean rice, tahdig and the tahchin everyone orders — and Haj Mahmood, first to open and last to leave, watches over it all before singing at the end of the day. 34 minutes of pure Persian food culture.
