Why can a mug cake puff up, then sink before it cools?
What pushes the batter upward, and what keeps it from falling back?
For adult English learners (B1-B2).
Fizz bets that extra baking powder will make a taller cake. Nova follows the bubbles through a mug cake, compares what changes when ingredients are left out, and looks at the moment when a soft batter becomes firm. Then they travel to higher elevations, where the same timing problem can become easier to spot. Along the way, Fizz and Nova use everyday English for baking science, from batter and leavening to starch and structure.
Words and phrases in this video: batter, baking powder, leavening, carbon dioxide, bubble, expand, protein, structure, starch, set, collapse, altitude.
