Hands first. It opens at a banh cuon steamer where a ladle of thin batter is spread over stretched cloth, covered for seconds, then peeled off in one unbroken translucent sheet on a flat bamboo stick and filled before it can cool. Then baguettes split and cut at speed, banana-leaf cakes wrapped and steamed, griddled tacos, pit-roasted beef carved warm, and a giant basket of chicken sticky rice.
No narration, no staging - just the food and the sound of the street.
