This video provides a step-by-step guide to making Chakali Bhajani (a flour mix for preparing Chakli), which can be stored for up to two months. The key is to wash and dry all ingredients thoroughly before roasting them on a low flame to avoid burning.
Ingredients and Preparation Process:
Rice (1 cup): Use old rice (not sticky/new rice). Roast until it changes color slightly (0:00-0:31).
Chana Dal (1/2 cup): Roast until crunchy (0:52-1:27).
Moong Dal (1/4 cup) & Urad Dal (1/4 cup): Roast these together as they have similar sizes until you get a pleasant aroma (1:31-2:31).
Coriander Seeds (1/4 cup): Roast until they emit a mild smell (2:31-2:57).
Cumin Seeds & Fennel Seeds (Saunf): Use a ratio of 1:1/2 for cumin to fennel. Roast together (2:58-3:39).
Poha (Flattened Rice - 1/2 cup): Roast until slightly stiff (3:40-4:01).
Black Peppercorns: Add 5-6 peppercorns and roast briefly (4:18-4:26).
Important Tips:
Always roast on low heat to ensure the grains are crunchy without turning dark, which could affect the final color of the Chakli.
Let the ingredients cool in a sieve to allow steam to escape so they don't get soggy (0:32-0:49).
Ensure all ingredients are cleaned and free of stones before starting (4:02-4:15).
