Clay pot roasted chicken and pork ribs — Thai street food cooked entirely over charcoal at Rompho Market in Jomtien, Pattaya, Thailand. No ovens, no gas: the meat is marinated, skewered and sealed inside large earthen clay pots with burning charcoal, then slow-roasted for thirty minutes to an hour. Rompho Market is a working local market rather than a tourist night market. It opens early with fresh produce, seafood, meat, snacks and an extensive range of cheap ready-to-eat meals, and it is where the surrounding community shops every day.
One thing that surprises most first-time visitors is how the vendors arrive. Many of them run their entire business from a modified motorcycle fitted with a compact sidecar kitchen — charcoal stove, grill, storage and serving counter, all built into a footprint barely larger than the bike itself. Every morning they ride in, unload the clay pots, and set up.
The clay pot method predates ovens and gas stoves. Thick earthenware walls hold heat and release it evenly while trapping steam around the meat. The fat renders slowly, the skin turns golden and crisp, and the charcoal leaves a light smoke through everything — a texture many cooks say modern equipment cannot reproduce.
Once the meat comes out, it is drained of excess oil and chopped into generous portions. Customers pick chicken or pork ribs, choose how much they want, and add either the mild or the spicy house sauce.
