Today, I’m going to show you how to turn leftover fried potatoes into a delicious and crispy stuffed Aloo Paratha.
Instead of wasting leftover potatoes, we’re going to give them a tasty makeover by mashing them, stuffing them inside homemade chapati dough, and cooking them on a hot skillet until golden brown.
I’ll be serving these delicious potato parathas with plain yogurt and crispy papadum.
So let’s get started and make this simple, homemade Aloo Paratha together!
Crispy Paratha with Leftover Aloo/Potatoes
*Ingredients*
• Leftover fried potatoes – as needed
• Regular chapati dough – as needed
• Whole wheat flour – for dusting
• Salt – to taste
• Red chili pepper – to taste
• Oil – for seasoning and cooking
• Plain yogurt and papadum – for serving
Step-by-step Instructions
Prepare the filling: Take the leftover fried potatoes and mash them smoothly using your fingers. Set the mashed potatoes aside.
Prepare the dough: Take a small portion of regular chapati dough and dust it with whole wheat flour. Roll it out into a small round chapati.
Add the filling: Place a portion of the mashed leftover potatoes in the center of the rolled dough. Add salt, red chili pepper, and a little oil according to your taste.
Fold and roll: Fold all four sides of the dough over the potato filling and seal it. Dust the stuffed dough with whole wheat flour again, then gently roll it out into a round paratha.
Cook the paratha: Heat a skillet or tawa over medium-high heat and apply a little oil. Carefully transfer the rolled paratha onto the hot skillet. Apply some oil on top and cook both sides until golden brown, with light brown spots appearing on the surface.
Serve: Transfer the hot Aloo Paratha to a plate and serve with plain yogurt and crispy papadum.
