Making Beef Wellington with my sister-in-law Theresa McGinn

Every time we come to New York to visit I learn something new. This time I thought I’d share what I learn with you! We toured her garden, learned about canning, about freeze drying, and how to make Beef Wellington. We picked and then peeled 50lbs of apples, and then peeled 20lbs of potatoes to make the best applesauce and apple pies you’ve ever tasted, mashed potatoes for the Beef Wellington dinner and then to freeze dry the rest.
