I've Never Eaten Eggplant Like This Before! Easy & Delicious Khattay Hyderabadi Baingan Recipe Ingredients For the Roasted Spice Paste: 2 tbsp peanuts 2 tbsp sesame seeds 1 tbsp desiccated coconut (or dry coconut flakes) 1 tsp cumin seeds 1 tsp coriander seeds Water (as needed for grinding) For the Eggplants: 500g small eggplants (baingan / baby aubergines), slit lengthwise into quarters while keeping stems intact 3–4 tbsp oil (for shallow frying) 1/2 tsp salt For the Curry Base: 3 tbsp cooking oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/4 tsp fenugreek seeds (methi dana) 10–12 fresh curry leaves 2–3 dry red chilies 1 medium onion, finely chopped 1 tbsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder Salt to taste 1/2 cup tamarind pulp / juice (soaked tamarind strained with water) 1 cup water (adjust to desired gravy consistency) Fresh coriander leaves (for garnish) Instructions 1. Preparing the Spice Paste: In a pan over low heat, dry roast the peanuts, sesame seeds, desiccated coconut, cumin seeds, and coriander seeds until fragrant and light golden. Allow the mixture to cool, then transfer to a grinder with a little water and blend into a smooth paste. 2. Frying the Eggplants: Slit the baby eggplants into four x-shapes keeping the stems intact. Heat 3–4 tablespoons of oil in a pan, add the eggplants with a pinch of salt, and fry on medium heat for 6–8 minutes, turning occasionally until soft and slightly charred. Remove and set aside. 3. Tempering (Tadka): In the same pan (add a little more oil if needed), add the mustard seeds, cumin seeds, fenugreek seeds, dry red chilies, and curry leaves. Let them sizzle for a few seconds until aromatic. 4. Making the Masala Base: Add the finely chopped onions and sauté until translucent and golden brown. Add the ginger-garlic paste and cook for another minute until the raw aroma disappears. 5. Cooking the Roasted Paste & Spices: Stir in the powdered spices (turmeric, red chili powder, coriander powder, and salt). Pour in the prepared roasted peanut-sesame paste and cook on medium heat for 4–5 minutes, stirring continuously, until oil starts to separate from the sides of the masala. 6. Adding Sourness & Simmering: Pour in the tamarind pulp and 1 cup of water. Mix well to combine into a smooth gravy and bring it to a gentle boil. 7. Combining & Cooking: Gently place the fried eggplants into the simmering gravy. Cover with a lid and cook on low flame (dum) for 8–10 minutes so the eggplants absorb all the rich, tangy flavors. 8. Serving: Garnish with freshly chopped coriander leaves and serve warm alongside steamed rice, biryani, or roti.
