🥘 Foil-packet suppers, pages 40 to 43: salmon, chicken fajita, hamburger hobo and sausage and potato, and 36 more small suppers for one, one page each, for less than one restaurant plate 👉 https://lorettaschurch.com/one?src=of...
Supper, and the only thing I wash is one fork. I'm Loretta, 81, from Story County, Iowa. For sixty years I cooked for a hundred people at a time in the basement kitchen of our church. Then Harold passed, and the hardest supper I ever made was the first one for just me. In this video I show you four foil-packet suppers from my cookbook, Supper for One, plus the same idea on a sheet pan, with the temperature, the minutes and the reason behind each step.
FOIL-PACKET SUPPERS (from Supper for One, pages 40-43)
1. SALMON, POTATOES AND GREEN BEANS (page 40) · costs $3.80 · makes 1 plate · takes 30 minutes
You'll need: 1 salmon fillet; 4 baby potatoes, sliced thin; a handful of green beans; 1 tablespoon butter, lemon slices, dill, salt, pepper; heavy foil, 14 inches long.
1. Heat the oven to 400°F. Lay potatoes in the middle of the foil, beans on them, salmon on top.
2. Butter, lemon, dill, salt and pepper on the fish.
3. Fold the foil over and crimp the edges twice. Bake 25 minutes. Open carefully: steam.
Loretta's trick: slice the potatoes thin or they won't be done when the fish is. Keep it safe: fish to 145°F. Open the packet away from your face.
2. CHICKEN FAJITA PACKET (page 41) · costs $2.30 · makes 1 plate · takes 30 minutes
You'll need: 1 chicken breast or 2 tenders, in strips; 1/2 bell pepper and 1/4 onion, in strips; 1 teaspoon oil, 1 teaspoon taco seasoning; 2 small tortillas.
1. Heat the oven to 400°F. Toss everything but the tortillas together and put it in the foil.
2. Seal tightly and bake 22 to 25 minutes.
3. Warm the tortillas on top of the packet the last 2 minutes.
Keep it safe: chicken to 165°F.
3. HAMBURGER HOBO PACKET (page 42) · costs $2.00 · makes 1 plate · takes 45 minutes
You'll need: 1 hamburger patty; 1 potato and 1 carrot, sliced thin; 1/4 onion, sliced; 1 tablespoon butter, salt, pepper.
1. Heat the oven to 400°F. Layer potato, carrot and onion on the foil, patty on top, butter on that. Season.
2. Seal tight.
3. Bake 40 minutes.
Loretta's trick: a spoon of cream of mushroom soup on the patty makes its own gravy. Keep it safe: beef to 160°F.
4. SAUSAGE AND POTATO PACKET (page 43) · costs $1.80 · makes 1 plate · takes 30 minutes
You'll need: 3 inches smoked sausage, sliced; 5 baby potatoes, quartered; 1/2 cup green beans or corn; 1 teaspoon oil, salt, pepper, paprika.
1. Heat the oven to 400°F. Toss everything and put it in the foil.
2. Seal and bake 25 to 30 minutes.
3. (From the book) Make three packets on Sunday and keep them in the fridge, ready to bake. Keep assembled raw packets in the fridge no more than a day.
ON A SHEET PAN, LINED WITH FOIL
CHICKEN THIGH AND LITTLE POTATOES (page 7) · costs $2.10 · makes 1 plate · takes 40 minutes
You'll need: 1 bone-in chicken thigh; 5 or 6 baby potatoes, halved; 1/2 small onion, in wedges; 1 tablespoon oil; salt, pepper, 1/4 teaspoon paprika, 1/4 teaspoon garlic powder.
1. Heat the oven to 425°F. Line the pan with foil.
2. Toss the potatoes and onion with half the oil, salt and pepper, and spread them out.
3. Rub the chicken with the rest of the oil and the spices, and set it skin up in the middle.
4. Bake 35 to 40 minutes, until the skin is crisp and the potatoes are golden.
Loretta's trick: pat the chicken skin dry with a paper towel first. Keep it safe: chicken is done at 165°F at the thickest part, next to the bone.
SAUSAGE, PEPPERS AND ONIONS (page 8) · costs $2.40 · makes 1 plate · takes 30 minutes
Heat the oven to 425°F. Toss peppers and onions with oil, salt, pepper and a pinch of Italian seasoning on the lined pan. Lay the sausages on top. Bake 25 to 30 minutes, turning the sausages once. Raw sausage must reach 160°F.
