Spam. Shoulder of Pork and hAM. 90% shoulder, 10% ham. Salted, cured, cooked, and sealed in a can since good ol' 1937. Better believe I have a copy of the Spam Cookbook. So I chose 3 recipes from deep frying comfort, to fine dining to sacrilegious. Spam fritters, Spam steaks with port wine, and something called a penny-wise Spam paella. YAY!!!
