How did people in a 40°C desert city eat ice in July, with no electricity? The answer is the ice houses of ancient Persia, called yakhchals, and a trick that let water freeze even when the air stayed above zero. This is the story of the yakhchal, the Persian "ice pit": how workers farmed ice on winter nights in shallow pools fed by qanats, and how giant mud-brick domes kept it frozen until summer in places like Yazd, Meybod and Kerman. Behind it is a piece of physics most of us were never taught: radiative cooling, sending heat straight up into space on a clear, dry night. In this video you'll find out: Why Persian ice was farmed, not mined How water can freeze on a night when the air is +3°C The strange ingredients in the mortar of an ice house (yes, egg whites and goat hair) Who actually got to eat the ice, and it wasn't just kings Why Stanford engineers use the same physics today, and want a version of it on your roof Have you ever walked out to find frost on your car on a morning the forecast said would stay above freezing? Tell me where you were and what the night was like in the comments, because that is the same trick Persia used.
