Green Moong Sprouts Sabji Portion: 5-6 pax Preparation Time: 10 mins Cooking Time: 40-45 mins Ingredients: For Boiling the Green Moong Sprouts: Green moong sprouts 3 cups Water as required Turmeric powder ½ tsp Salt 1 tsp For the Masala: Mustard oil 1 tbsp Jeera 1 tsp Bay leaf 1 pc Cloves 3–4 pcs Hing ½ tsp Onion chopped 1 pc Ginger & garlic paste 1 tbsp Red chilli powder 1 tsp Coriander powder 1 tsp Jeera powder ½ tsp Turmeric powder ½ tsp Kitchen King masala 1 tsp Fresh tomato puree 2 pcs Water as required Salt ½ tsp Coriander chopped 1 tbsp Method: Step 1: Pressure Cook the Green Moong Sprouts Wash the green moong sprouts thoroughly and transfer them to a pressure cooker. Add turmeric powder, salt and enough water. Close the pressure cooker and cook for 1 whistle. Switch off the heat and allow the pressure to release naturally. Open the cooker and keep the cooked sprouts aside. Step 2: Prepare the Masala Heat mustard oil in a pan. Add jeera, bay leaf and cloves. Allow the whole spices to crackle. Add hing and sauté briefly. Add chopped onion and cook until golden brown. Add ginger and garlic paste and sauté until the raw aroma disappears. Step 3: Cook the Masala Add red chilli powder, coriander powder, jeera powder, turmeric powder and Kitchen King masala. Mix well and cook the spices briefly. Add the fresh tomato puree and cook until the tomatoes are completely cooked and the oil begins to separate from the masala. Add a little water and mix well to form the gravy. Add salt and cook for another minute. Step 4: Add the Sprouts Add the boiled green moong sprouts to the prepared masala and mix gently. Add water as required to adjust the consistency. Bring the sabji to a boil and simmer briefly so the sprouts absorb the flavours of the masala. Step 5: Finish & Serve Finish with freshly chopped coriander and mix gently. Serve the Green Moong Sprouts Sabji hot with paratha, roti or phulka.
